BACON WRAPPED MINI RED POTATOES & HOMEMADE SRIACHA RANCH

Added the grilled method for Summer.  Happy Independence Day! 
 
What’s in it?
24 small new potatoes
12 slices bacon, cut in 1/2
24 toothpicks                  
 
How it’s made:
 
Preheat grill to low heat, and lightly oil the grate. (Oven Method: Preheat to 350 degrees) 
 
Wash potatoes thoroughly and dry with paper towels.
 
With clean hands wrap each potato with a piece of bacon and secure with a toothpick.
 
Place the wrapped potatoes on the grill, turning the potatoes several times to allow the bacon to cook on all sides. (Oven Method: place wrapped potatoes on lined sheet pan and lightly cover with foil, no need to turn bacon)
 
The potatoes are done when the bacon is fully cooked and crispy, about 20 minutes. (Oven Method: same as grill method, but when done remove foil and turn oven to broil and crisp bacon for about 5 mins, just until bacon is crisp)
 
Homemade Sriacha Ranch
 
What’s in it?
1 cup mayo  
1/2 cup sour cream   
1/2 teaspoon dried chives
1/2 teaspoon dried parsley     
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt                   
2 tablespoons Sriracha 
 
How it’s made:
In a large bowl, whisk together all the ingredients. Cover and refrigerate for 30 minutes before serving.

HONEY SRIRACHA SAUCE

Sweet and Spicy Honey Sriracha Sauce recipe for your next batch of wings, glaze or marinade.

What's in it?
Honey
Sriracha
White Vinegar

How it's made:
In a large bowl, with a whisk mix together equal Parts of Honey & Sriracha, and add a dash of Vinegar until combined.

Equal parts example: 
1 C Honey
1 C Sriracha
1-2 Tablespoons Vinegar

Use this spicy sweet concoction as a wing sauce, glaze, for grilling or a marinade.

CUCUMBER, TOMATO, FRESH MOZZARELLA AND OLIVE SALAD WITH BALSAMIC

​HOW IT’S MADE:
​
2 ENGLISH CUCUMBERS (WASHED/CHOPPED)
1 PINT CHERRY TOMATOES (WASHED/WHOLE OR CUT IN HALF)
1 6OZ CAN LARGE BLACK OLIVES (CUT IN HALF)
1 RED ONION (DICED)
1 8OZ BALL FRESH MOZZARELLA (CUT INTO CUBES)
1 BUNCH BASIL (CHOPPED, STEMS AND ALL)
FRESH BLACK PEPPER (TO TASTE)
BALSAMIC DRESSING (I LIKE OIL FREE FIG BY 365 ORGANIC OR OLIVE GARDEN DRESSING)

MIX ALL INGREDIENTS TOGETHER AND SERVE AS A MAIN COURSE OR A SIDE.

SUPER SEEDS SPICED GRANOLA RECIPE

Preheat oven to 300°F.
 
Combine the following ingredients: 1 cup Pepitas (raw, pumpkin seed kernels), 1 cup Sunflower Seeds (raw), 1 cup Cranberries (dried, unsweetened), 1/4 cup Hemp Hearts (optional), 1-2 tbsp Chia Seeds, 1-2 tbsp Flax Seeds (ground), 2 tbsp Brown Sugar, 2 tbsp Agave, 1 tbsp Tamari, 1 tbsp Coconut Oil (melted), 1 tsp Cumin, Cinnamon, and Red Pepper Flakes.
 
Mix all ingredients thoroughly and spread onto a parchment lined baking sheet. Bake 20-30 mins, turning and spreading mixture halfway through baking until mixture is dark golden brown and smelling nice and toasty.
 
Cool mixture and store in an airtight container for two weeks or freeze up to three months.

"NOT-SO-CUBAN" BLACK BEANS & RICE

"Not-So-Cuban" Black Beans & Rice Recipe #TheMixedChickVersion (typed from my phone, hopefully got everything in)

2 Cans Organic Black Beans (Drained & Rinsed)
2 C Long Grain Rice
4 C Chicken Broth (more as needed)
1/4 C Olive Oil (Mixed with 2 Tbsp Ground Anchiote)
1/2 C Sofrito
1/4 C Green Olives (Chopped)
4 Tbps Pimentos
1/2 tsp Cumin
1/2 tsp Allspice

In a large deep skillet with a fitted lid (on Medium High-ish temperature) heat Anchiote Olive Oil and cook until sizzling and fragrant. Add Sofrito and cook until most of the liquid evaporates. Stir in the Rice, Olives and Pimento, making sure rice is fully coated with the oil. Stir in the Chicken Broth, Cumin and Allspice, and then add the Black Beans. Cover and let simmer on Medium Low-ish until rice is fully cooked (more broth may need to be added). Once fully cooked, turn off heat and fluff the Rice with a fork. Serve with limes and tortillas.

“SUPERFOOD” PUMPKIN & SPICE OATMEAL

​1 C       Steele Cut Oats
1.5 c     Water
1.5 c     Almond Milk
¼ tsp    Salt
 
2 T       Chia Seeds
½ C      Pumpkin Puree
1 tsp     Pumpkin Spice
 
Raw Almonds
Raw Pumpkin Seeds
Raw Sunflower Seeds
Unsweetened Coconut
Dried Unsweetened Cranberries
 
Bring water, almond milk and salt to a boil then add the Steel Cut Oats.
 
Reduce heat to a low simmer. Cover and cook 10 - 20 minutes (depending on how soft you like your oats). Stir occasionally.
 
Remove from heat and stir in Chia Seeds, Pumpkin and Pumpkin Spices, and let Oatmeal stand covered for 10 minutes.
 
Serve with additional Almond Milk and sweeten with Organic Agave, Maple or Molasses. Top with Raw Almonds, Pumpkin Seeds and Sunflower Seeds, Unsweetened Coconut and dried Cranberries.

6 ROASTED JALAPEÑOS (ROASTED OVER A FLAME)
10 FRESH CLOVES OF GARLIC (PEELED & ENDS REMOVED)
(CHOP JALAPENOS & GARLIC IN A FOOD PROCESSOR OR CHOPPER)

8 FIRM ROMA TOMATOES (WASHED & CHOPPED)
1 LARGE WHITE ONION (DICED)
2 LIMES (JUICED)
1 BUNCH OF CILANTRO (CHOPPED, STEMS & ALL)
KOSHER SALT (TO TASTE)

MIX ALL INGREDIENTS TOGETHER AND SERVE OVER EGGS, WITH CHIPS, AS A CONDIMENT OR JUST ENJOY AS IS!

1 BUNCH OF CILANTRO (CHOPPED, STEMS AND ALL)
6 CLOVES FRESH GARLIC (DICED)
2-3 LIMES (JUICED)
THAI CHILI (ADD ENOUGH TO YOUR SPICE LEVEL)
KOSHER SALT (TO TASTE)

MIX ALL INGREDIENTS TOGETHER AND SERVE OVER FRESH GREENS, STEAMED RICE OR WITH PITA CHIPS.
